We are based at Mata-Utu, on the island of Wallis, in the middle of the South Pacific. Our role is to provide all the services shipping companies may need. Our core task is the recruitment and management of crew members for ships registered in Wallis-et-Fortuna. Our guiding principles are characterised by respect, availability and support. Job Description
**Job Title** Restaurant Director **Role Summary** Oversee the operation and service quality of a luxury cruise ship restaurant, leading the culinary and service team, managing budgets and wine sales, ensuring compliance with ISM, HACCP, and environmental standards, and maintaining high passenger satisfaction in a 5‑star environment. **Expectations** - Deliver consistent French‑style service standards. - Achieve budgetary and wine revenue targets. - Provide comprehensive training and performance management for the brigade. **Key Responsibilities** - Lead, schedule, and coordinate the restaurant team. - Design and conduct training sessions on service techniques, wine, and cheese. - Conduct daily briefings to review menus, service issues, and special requests. - Collaborate with Maîtres d’Hôtel on passenger reception and restaurant reservations. - Place wine and equipment orders; follow up with the Cost Controller. - Monitor wine sales and handle invoicing. - Inspect and maintain kitchen and service equipment; report defects. - Enforce ISM, HACCP/USPHS, and environmental policies. - Evaluate staff performance, identify promotion candidates, and foster a positive brigade culture. - Relay passenger feedback to the Hotel Director. - Execute other quality‑related tasks assigned by the Hotel Director. **Required Skills** - Strong leadership and team‑management abilities. - Excellent organizational and anticipatory skills. - Fluency in English (French language skills are a plus). - In‑depth knowledge of French culinary service standards, wine, and cheese. - Experience with budgeting, sales monitoring, and invoicing. - Familiarity with ISM, HACCP, and USPHS regulations. - Outstanding customer‑service orientation. **Required Education & Certifications** - Minimum BST Diploma in Hospitality & Catering. - At least 1 year of experience in a similar role within a luxury hotel or restaurant setting. - Relevant certifications in wine service and HACCP preferred.
