**Job Title** Packing Operative **Role Summary** Pack red meat products in a high‑volume processing facility, ensuring cuts are correctly identified, weighed, labelled and packed according to client specifications and SOPs. Job Description
**Job Title:** Quality Assurance Technician – Meat Processing **Role Summary:** Ensure compliance with customer, legislative, and industry standards within the boning hall and associated meat processing areas. Execute HACCP‑based monitoring, perform pH testing, record results, and report deviations to maintain product quality and safety. **Expectations:** - Adhere to HACCP principles and company safety policies. - Operate within a chilled environment and manage manual handling safely. - Communicate effectively in English with multidisciplinary teams. - Demonstrate initiative, adaptability, and the ability to meet deadlines under pressure. **Key Responsibilities:** - Conduct 100 % pH testing of all carcasses; calibrate pH meters daily with pH 4 and pH 7 buffers (± 0.05 tolerance). - Record pH results on paper or electronically (TraceSoft). - Verify pH against time‑temperature curves; tag and downgrade carcasses that do not meet specifications. - Ensure carcasses are chilled correctly to control pH decline and prevent quality defects. - Report any safety, equipment, or material issues to management for immediate resolution. - Perform additional duties as assigned to support site quality and safety objectives. **Required Skills:** - Strong knowledge of HACCP and food safety procedures. - Experience with high‑volume meat processing and pH testing protocols. - Proficiency in record‑keeping and basic data entry (TraceSoft or equivalent). - Manual handling competence and awareness of chilled‑environment hazards. - Clear written and verbal communication in English. - Ability to work independently and collaboratively, multitask, and manage pressure. **Required Education & Certifications:** - HACCP foundation level certification (preferred). - Level 2 food hygiene certification for manufacturing (preferred). - Demonstrated experience in a high‑volume meat processing factory.
